Egg Rogan Josh


Egg – 4
Onion (large) – 1
Tomato – 1
Ginger paste – 1/2 tsp.
Garlic paste – 1/2 tsp.
Bay leaf – 1
Fennel powder – 1/2 tsp.
Kashmiri red chilly powder – 1/2 tsp.
Asafoetida (hing) – a pinch.
Garam masala powder – 1/4 tsp.
Turmeric powder – 1/2 tsp.
Red chilly powder 1/2 tsp
Cumin powder – 1/2 tsp.
Salt to taste
Sugar – a pinch
Oil – 6 tbs.
Ghee – 1 – tbsp.


By adding 3 cups of water boil the eggs for 7 to 8 minutes. Keep the eggs in normal water and take the shells out. Marinate the eggs with 1/4 tsp.of salt and a pinch of turmeric powder and prick with a fork or knife,keep aside. Grind onion and tomato into a paste. To this add ginger-garlic paste,chilly-cumin-turmeric powders and 1/2 cup of water. Mix well. Keep the masala mix aside. Heat oil in a frying pan. When it is hot reduce the heat. Fry the eggs lightly.Take out from the oil,keep aside. Add hing and bay leaf in the remaining oil, fry for 30 seconds. Add the masala mix and sugar, saute on slow flame till oil separates. Add Kashmiri red chilly powder,fennel powder and little water. Saute for one minute. Add 1 to 1+1/2 cups of water and let it brings to boil. Add eggs,salt ,ghee and garam masala powder. Cover the pan and simmer for 5 to 7 minutes (stir in between). When the gravy starts thickening remove pan from the heat, give 10 minutes standing time. Delicious Egg Rogan Josh is ready, serve with Rice/Roti/Paratha.
